Tasty Thai Red Curry with Lentils and hake

This one couldn’t get much easier, 20 mins including prep, a healthy dose of carbs, fats and proteins with a massive hit for the taste buds! Ingredients: Coconut oil x 1tsp Hake x 1 fillet per person Lentils x 75g per person Coconut milk x ½ tin per person Red curry paste x 1tbsp Salt and pepper Fresh coriander cherry toms x 5 per person Direction:

  1. Add the oil to a frying pan

  2. Once melted add the Hake and cook for one minute on each side

  3. Then add the Lentils, coconut milk, curry paste, and tomatoes

  4. Simmer until Hake is cooked through and add salt, pepper and coriander
