Recipe of the week – spicy chicken burger with mango salsa

Spicy Chicken burgers with mango salsa prep time: 15 min Cook: 10 min Serves 4 Ingredients 2 Large skinless chicken breasts, halved 4 pitta breads 2 tbsp roasted red pepper 2 spring onions For marinade Juice of 1 lemon 3 tdsp korma or mild curry paste 125g 0% fat free natural yogurt 2 tabsp chopped coriander For salsa 1 small mango, diced 1 ripe avocado, diced 1 red onion, diced 2 tdsp chopped fresh coriander 4 tdsp sweet chilli sauce squeeze of lime or lemon juice 1: put the chicken between 2 pieces of cling film or in a plastic bag and flatten with a rolling pin to even thickness. Cut the flattened chicken into wide strips and put in a non-metallic bowl. 2: In another bowl marinade ingredients, then pour over the chicken and mix to coat. Cover, then transfer to the fridge to marinate for up to 3hr. 3: Meanwhile, max all the salsa ingredients together in a bowl and set aside. 4: Pre heat the griddle. Cook the marinated chicken strips for 4-5 min on each side or until cooked through. 5: warm the pitta breads, then split them open. Fill each with chicken, then top with a dollop of mango salsa, the peppers and spring onions. Kals: 409 per serving Protein: 29.7g Fat 11.7g Saturates 2.1g Carbohydrates 48.6g
