Spicy Tomato Cod

Ingredients:
1x 400g tin chopped tomatoes
1 clove of garlic
2 tablespoons of fresh parsley
180g sun dried tomatoes in Oil (drained)
1 medium hot red chilli (de-seeded)
Method:
Place all the ingredients into a food process and blitz until they are a smooth texture.
Spoon the mixture on top of each cod fillet (skin side down)
Cook in the middle of a pre-heated oven at 190 degrees for 15-20 minutes on a baking tray.
Leave to stand on the side for 1min.
Once cooled sprinkle parsley over on each fillet of cod and serve on a serving dish with a side salad.
