Tomato and potato fish bake
Ingredients
750g potatoes, thinly sliced
4 large tomatoes, thick sliced
2 red peppers, chopped
500g mixed fish
50g fresh breadcrumb
25g parmesan
2 tbsp finely chopped parsley
320g steamed green beans, to serve
500g mixed fish
 
1-Heat oven to 200c/fan 180c/gas 6. Spray baking dish with oil. Steam or boil the potatoes for 5-6 mins until tender, then drain.
2-Layer up the tomatoes and potato slices with chopped peppers. Top with the fish and spray with oil.
3-In a bowl, combine the breadcrumbs with the parmesan and parsley. Scatter crumb mix evenly then bake for approx. 25 min s until the fish is cooked through and cheese is melted. Served with the green beans
