Peanut Butter Chicken Noodles
Serves 2-3
INGREDIENTS: 2 Chicken Breasts 1 tsp Coconut Oil 1 Small Red Onion 1 tbsp Soy Sauce 1 Pepper 1/2 Courgette or Sugar Snap Peas Handful of Baby Corn 2-3 tbsp Peanut Butter 200 g Rice Noodles Melt a tsp of coconut oil in a hot wok. Add in the onions and fry for a couple of minutes. Next add in your chicken and cook for 5-6 minutes. Throw in your courgette, pepper and baby corn and give all the ingredients a good toss in the pan. Add in the noodles and cook for 2 minutes. Place your peanut butter in a bowl and loosen with a splash of warm water. Add in you soy sauce and mix and then pour the mixture into the pan. Give everything a good mix to make sure the sauce coats all the chicken, veg and noodles. Serve.
