Chocolate & Peanut Butter Energy Balls

Ingredients
50g blanched almonds
60g unsweetened peanut butter
20g unsalted peanuts, roughly chopped
3tbsp flaxseeds
30g plain chocolate with 85% cocoa, finely chopped
1tsp cocoa powder
Sea salt
Per ball:
144 kcal
12g fat
2g sat fat
6g carbs
1.7g sugar
3g fibre
5g protein
 
Method
Put the almonds in a food processor and process for a minute, until you have the texture of rough flour.
Put the peanut butter, peanuts, flaxseeds, chocolate and a small pinch of salt in a bow, and mix. Add the almond flour, reserving 1 ½  tablespoons. Mix until you have a texture resembling chunky clay.
Sprinkle the remaining almond flour and the cocoa powder onto a plate and mix with a teaspoon. Form a tablespoon sized blob of the peanut mixture into a ball using your palms. Roll it in the cocoa powder mixture, then transfer to a plate. Make a further seven balls in the same way.
